Ingredients:
4 plum tomaoes cut into wedges
2 Tbsp balsamic vinegar
2 tsp fresh thyme
1 tsp olive oil
1 large sweet onion, sliced
1 yellow pepper chopped
3 garlic gloves, minced
1/4 C pimento stuffed green olives, chopped
4 (5 oz) cod fillets*
1/8 tsp black pepper
1/8 tsp salt
Preheat oven to 450 degrees. Spray 9x13 baking dish with nonstick spray. Arrange tomatoes, cut sides up in baking dish. Drizzle with 1 tbsp vinegar and sprinkle with thyme. Roast unil tomatoes are soft turning once, about 12 minutes.
Meanwhile, heat oil in a skillet over med-high heat. Add onion and cook until brown, about 4 minutes. Reduce heat and add bell pepper and garlic. Cook until pepper is soft, about 8 minutes.
Add onion mixture and olives to tomato mixture. Place fish fillets on top of vegetable mixture. Drizzle fish with remaining 1 tbsp of vinegar and sprinkle with salt and pepper. Bake until fish is opaque in center, about 12 minutes.
*When using frozen cod loins, roast veggie ( tomatoes ) then cook cod separately for 12 minutes. Then proceed wih recipe.
